Broad, textural Chenin from a single half-hectare plot. With a prickly, perlant energy on opening, the wine shows a wonderful balance of soft edges and angular tension. Vinous orchard fruits, sherbert-y lemon rind, with a zing of passion fruit and its invigorating acidity carrying later notes of ginger spice and stony minerals into the long finish. Taut, electric and lush, this is a wonderful way with the varietal.

Bunches are de-stemmed and macerated on the skins for 9 days before being gently pressed off to steel to complete fermentation and rest until the spring. As with all of Olivier's wine, nothing was added or removed at any stage.
